Being over a meter tall and relatively narrow this smoker represents superb value considering the size of fish or fillet it can accommodate. Used widely in Ireland for smoking eels, it is equally suitable for large salmon or marine fish. This smoker is suitable for both hot and cold smoking.
This smoker is fueled with sawdust packed into the removable firebox at the bottom. The sawdust is best lit with a blowtorch or hot air gun and flames dampened down with water spray.
